Emily Hutto, Communications Manager at Dry Dock Brewing Co., explains the inspiration and development of Dry Dock’s High Line Plum Saison-Brett.

In collaboration with the High Line Canal Conservancy, South Dock brewed the High Line Plum Saison-Brett this fall for the Beers Made by Walking Festival!

When searching for inspiration for the Beers Made by Walking Festival, South Dock’s Head Brewer, Tim Evon, went scouting for these plums along the Canal. “My reaction at first was a bit of surprise that these plums would grow in the high desert climate we have here on the Front Range,” Tim recounts. “I found them growing in abundance about 30 feet from a small creek near my house in the south suburbs of Denver. They are fantastic to eat, ranging from tart to candy-sweet, almost jam-like.”

Prunus americana, commonly called American plum or wild plum, can be found in many areas along creeks and rivers on the Front Range up to 6,000 feet elevation. The shrubby trees are 10-15 ft. tall with beautiful white blooms in the spring and fruit colored in yellow, red, and purple. Those that use the Canal this time of year are sure to recognize them.

The High Line Plum Saison-Brett is a mixed culture fermentation utilizing two of our favorite saison yeast strains, our house strain, lactobacillus, and Brettanomyces. It is slightly tart and balanced, crisp, and bubbly with complex earthy notes of candied plums.

Beers Made By Walking is a program that invites brewers to go on nature hikes, and urban walks, and make new beer inspired by the edible and medicinal plants from the trail.
